Lentils are very inexpensive and can help add variety to your diet. While this healthy meal took a decent amount of time to prepare, it is very easy. Sometimes, I cook a large amount of lentils and then use them in different meals throughout the week.
Here, I cooked 1 cup of dried lentils for 25-30 minutes which yields 3 cups of cooked lentils. This is important to keep in mind because one cup of dry lentils doesn’t look like enough for multiple people. I sometimes cook larger amounts to last me the week and use lentils for other meals.
Then I mixed in sauteed vegetables with the lentils for added texture. I used tomatoes, onions, and zucchini. After setting the lentil mix aside.
Tony Chachere’s Creole seasoning is the seasoning blend that I use on EVERYTHING, therefore, I naturally added it to this meal.
I cooked a package of Near East pearled couscous. I followed the directions on the box but I recommend stirring frequently and cooking for less time because mine came out a little softer than I intended.
Finally, I threw everything together in a pretty bowl and ate!

I love lentils! I usually eat them like a stew, with a dollop of Greek yogurt and herbs on top. The red lentil soup from Bosphorus is so good and I try to recreate it all the time. Almost there but not quite.
