I’m visiting my parent’s home right now and was home alone today. Since the fridge has different items than I normally buy, and we finished our Thanksgiving leftovers, lunch seemed like a challenge. I grabbed a few items and whipped up a healthy meal for myself. Posting my meal was a bit of an afterthought so I almost didn’t put this up, but I hope it’s a little inspiration for the next time you are searching for lunch!
Since my mom had veggie burgers in the freezer, I grabbed a patty and started cooking it on a skillet.
Next, I chopped up a plum tomato and cilantro leaves; also opening a can of chickpeas.
Once the patty was ready I broke it up into chunks and threw in the chickpeas, tomatoes, and cilantro. I added a Thai peanut sauce for flavor and sifted all the ingredients around to simmer.
Once blended I just dumped the mix on a bed of lettuce and tiffined. You can replace the veggie burger with ground turkey or other meat but just keep in mind that the protein content will be much higher. Comment below your favorite quick, healthy meal and if you would like to see more of my meals!
